At Aubergine, we believe that fine wine is an experience meant to be shared and explored. That is why we created our special “Fine Wines by the Glass” concept. Over selected periods, we will be opening exceptional premium bottles from the world’s finest wine regions, offering you the opportunity to freely taste high-end wines by the glass, without the need to order a whole bottle.
Greece
Until the end of August, we are opening bottles from three iconic Greek wineries – Ktima Gerovassiliou, Ktima Biblia Chora, and Mikra Thira, giving you the chance to experience their exceptional character by the glass.
Ktima Gerovassiliou
Nestled in the picturesque region of Epanomi near Thessaloniki, the Gerovassiliou estate is synonymous with uncompromising quality and innovation in Greek winemaking. Created by the iconic winemaker Evangelos Gerovassiliou, today it stands as a global benchmark for the revival of indigenous Greek grape varieties. At Aubergine, we present a selection of their most remarkable wines, available by the glass.
Malagousia
This Malagousia is a true icon. Thanks to the efforts of the estate’s founder, this exceptional indigenous variety was saved from extinction, evolving today into a symbol of balance, class, and character.
Taste Profile
The wine undergoes a brief skin contact (maceration) and partial aging in French oak barrels.
Nose: Intense notes of ripe exotic fruits, white peach, green pepper, jasmine, and citrus.
Palate: Full-bodied, rich, and well-balanced, with superb freshness and a long finish enhanced by discrete hints of vanilla and nuts.
Culinary Pairings at Aubergine
Fresh seasonal salads with herbs and light citrus dressings;
Cold appetizers, Mediterranean dips, and spreads;
Dishes featuring lighter cheeses, dried or roasted fruits;
Tender white meats and culinary creations highlighted by fresh green herbs.
Ktima Biblia Chora
Nestled on the picturesque slopes of Mount Pangeon in the Kavala region of Northern Greece, the Biblia Chora estate is a symbol of the modern wine renaissance in our neighboring country. Created by visionaries Vassilis Tsaktsarlis and Evangelos Gerovassiliou, the winery combines a distinctive cool-climate terroir with innovative culinary concepts. The vineyards are organically cultivated, and their wines are distinguished by exceptional purity of flavor and strong character. At Aubergine, we offer you the opportunity to experience them by the glass.
Ovilos White – Semillon & Assyrtiko
Ovilos White is the estate’s most iconic white wine and the recipient of numerous international awards. It represents a masterfully balanced blend where the international Semillon variety (which provides body and structure) meets the powerful and explosive Greek Assyrtiko variety (which brings freshness and minerality).
Taste Profile
The wine ferments and ages for several months in small French oak barrels, which lends it remarkable complexity.
Nose: Reveals a rich and complex aroma of ripe yellow fruits, honey, nuts, candied citrus peel, and subtle mineral notes.
Palate: An exceptionally full-bodied, buttery, and concentrated texture. Its powerful structure is perfectly balanced by a bright, vibrant acidity, leading to an incredibly long, deep, and memorable finish.
Culinary Pairings at Aubergine
Due to its rich and complex structure, this wine demands fuller flavors on the table. In our garden, we highly recommend pairing it with:
Warm appetizers, bruschettas, and canapés featuring richer, marinated fish;
Seafood and specialties served with rich, creamy, or buttery white sauces;
Main courses of light meats with an emphasis on exotic spices, subtle curry, or ginger;
Hearty vegetarian dishes incorporating roasted nuts and aromatic, mature cheeses.
Mikra Thira
Mikra Thira is the first winery built on the small, rugged island of Thirasia, which was part of Santorini prior to the great volcanic eruption. Established as a joint venture between iconic winemakers Evangelos Gerovassiliou, Vassilis Tsaktsarlis, and Ioanna Vamvakouri, the estate aims to capture the purest, wildest, and most untouched expression of the volcanic terroir. The vineyards are cultivated entirely by hand in harsh conditions, yielding strictly limited-edition wines distinguished by their phenomenal depth. At Aubergine, we offer you the opportunity to experience them by the glass.
Santorini – Assyrtiko
This iconic Santorini is born from the joint venture of three of Greece’s top winemakers, capturing the purest expression of the Assyrtiko variety from the island’s volcanic soils. The wine is distinguished by its incredible concentration and a raw, pure terroir driven power, characteristic of the limited production of this young, yet already cult estate.
Taste Profile
Fermentation and aging take place in a controlled environment to maximize the focus on the wild character of the variety and the soil.
Nose: An exceptionally clean and intense profile with notes of green lemon, lime zest, white flowers, and a deep, distinct accent of wet stone, flint, and salty sea breeze.
Palate: Powerful, full-bodied, and mineral-forward with a piercing, vibrant acidity. The structure is tight and vertical, dominated by crisp citrus and a signature volcanic salinity that leaves an exceptionally long, dry, and energetic finish.
Culinary Pairings at Aubergine
Due to its purity, remarkable acidity, and saline profile, this wine demands dishes with character. In our garden, we highly recommend pairing it with:
Cold appetizers featuring raw or marinated fish, seafood, oysters, or classic tarama salad;
Fresh seasonal salads with crisp vegetables, herbs, and vibrant citrus vinaigrettes;
Grilled fish or roasted seafood, seasoned simply with high-quality olive oil and fresh lemon;
Light dips or specialties featuring salty, aged white cheeses.

Made entirely from the iconic Xinomavro variety. Here, its characteristic tannic power is perfectly tamed to achieve an exceptionally elegant, fresh, and highly gastronomic rosé.
A red wine combining three legendary indigenous varieties. At its core is Limnio-the oldest documented grape variety in the world, mentioned by Aristophanes as early as the 5th century BC—complemented by the characteristic structures of Mavroudi and Mavrotragano.
Ovilos Red is the estate’s iconic red wine, produced in limited quantities with exceptional potential for long-term aging. It is a pure, 100% Cabernet Sauvignon varietal, cultivated in specially selected vineyards along the cool slopes of Mount Pangeon, which lends it remarkable elegance and depth.
