Your Craft Beer Bistro in Sofia: Discover Authentic Beer Culture

At Aubergine, we believe that beer is a craft, a culture, and a natural partner to fine food. As a craft beer bistro in the heart of Sofia, we transform beer into an essential part of our restaurant experience.

Craft Beer is the ‘signature cuisine’ of brewing. Unlike mass production, the focus here is on quality ingredients, small batches, and freedom of flavor. Every brew carries the brewer’s signature – malt, hops, water, and yeast are often complemented by natural spices, fruits, or herbs.

Craft Beer at Aubergine: Main Styles and Food Pairing

Lager, Pilsner & Helles

Classic pale beer in its purest, unfiltered, and high-quality artisanal form.

Style Highlights:

Lager: A balanced and clean taste, achieved through prolonged cold maturation.
Pilsner: Characterized by pronounced hop bitterness, a golden hue, and a dry, refreshing finish.
Helles: A smoother, maltier version with gentle sweetness and minimal bitterness.

Aubergine Pairing: The perfect companion for fresh salads and light appetizers. The clean taste of the lager does not dominate over the delicate fish and seafood in our menu. 🥗 🐟 🧀

Weiss / Wheat Beer

A Bavarian classic where at least half of the malt is wheat, giving the beer a velvety smoothness.

Style Highlights:

Hefeweizen: The traditional cloudy beer with characteristic notes of banana and clove.
Witbier: The Belgian interpretation – lighter, often brewed with orange peel and coriander.

Aubergine Pairing: Beautiful with seafood, fish, and lighter desserts. 🦐 🐟 🍰

Pale Ale & IPA

The symbol of the craft revolution, where the diversity of hop aromas takes center stage.

Style Highlights:

IPA (India Pale Ale): The genre’s classic; a beer with intense hop aroma (citrus, pine, flowers) and a characteristic, noticeable bitterness.
APA (American Pale Ale): A balanced and highly drinkable beer with fresh hop aroma and moderate bitterness.
NEIPA: Hazy, juicy, and smooth – a true explosion of tropical fruits without intrusive bitterness.
Double IPA (DIPA): A stronger and more intense version for connoisseurs of powerful hop character and full body.
Session IPA: A lighter, lower-alcohol version of IPA that retains a rich hop aroma but remains exceptionally drinkable.

Aubergine Pairing: Pairs perfectly with spicy dishes, appetizers (dips), or intensely flavored cheeses. 🌶️ 🥗 🧀

Sour Beer

The modern hit of the craft scene. Fermented with wild yeast or bacteria, often with added fruits like raspberries, cherries, or peaches.

Style Highlights:

Fruit Sour: Fermented with real fruit (raspberries, peaches, cherries) for natural freshness.
Gose: A traditional style with a slightly salty note and coriander, enhancing the feeling of coolness and refreshment.

Aubergine Pairing: The ideal companion for fresh cheeses or as an aperitif. The tart flavor works as a perfect contrast to our shrimps or our salads with nuts, roasted fruits, and honey dressings. 🍤 🧀 🥗

Stout & Porter

The dark side of beer, crafted from heavily roasted malts that bring comfort and intensity.

Style Highlights:

Stout: Full-bodied with nuances of roasted coffee and dark chocolate.
Porter: A slightly lighter version with prevailing notes of caramel, nuts, and toasted bread.
Imperial Stout: A powerful, high-alcohol beer with extremely intense flavors, often reminiscent of a liqueur.

Aubergine Pairing: Chocolate desserts, red meats, or aged cheeses. The deep malty notes are a natural complement to our slow-cooked meats and rich sauces. 🥩 🍫 🧀

Wild Ale

Beer with a “wild” heart. Fermented with natural yeasts and bacteria, often aged for a long time in oak wine barrels. This is the beer style closest to wine.

Style Highlights:

Flanders Red/Brown: A specific, complex acidity with nuances of dried fruits and oak.
Brett Ale: Characteristic “funky,” farmyard, and earthy notes that evolve and change over time in the bottle.

Aubergine Pairing: This is where we enter the territory of “haute cuisine” pairings. The complex acidity pairs perfectly with our duck magret, our grilled goat cheese dishes, or any offerings with a fine balance between sweet and savory. 🦆 🧀 🍓

The Bulgarian Craft Scene

Bulgaria is experiencing a true brewing renaissance. Over the past decade, local microbreweries have proven they can create world-class products. Today, there are around 40 independent craft breweries operating in the country, shaping a small but dynamically evolving scene.

Bulgarian craft beer is bold and experimental, often inspired by local ingredients such as herbs, honey, and traditional fruits. At Aubergine, we support independent brewers and carefully curate a selection that showcases the best of Bulgarian artisanal beer, from fresh lagers to complex IPAs and Stouts.
